The Norwegian born composer Ola Gjeilo was born in 1978 and moved to the USA in 2001 to study composition at New York’s Juilliard School, now based in Atlanta, Georgia, he spent 3 days at Central Washington University for a project in which he joined the the CWU Chamber choir in recording 3 of his compositions. It’s a beautiful piece of music which benefitted greatly from Gjeilo’s improvised accompaniment, but judge for yourself, the video, text, and translation to English are all below the fold. Enjoy :-).
On this video, Gjeilo adds an improvised accompaniment (in a one-take rendition) to his setting of the Ubi Caritas text — which is published as an unaccompanied piece. Because of his view that improvising is a wonderful snapshot of artists "at that moment", the project was entitled "In the Moment".

Ubi caritas et amor
Ubi caritas et amor, Deus ibi est.
Where charity and love are found, there is God.
